Slow-dried herbs for clean infusions

The Natural Rate of Water Loss

Fresh plants contain a lot of water. Forced drying at high heat destroys fragile tissue. We dry wild thyme on wooden frames and cotton cloth. Air circulates freely on all sides. The process takes several weeks in cool, shaded spaces. The slow pace keeps the flower intact.

Visual Inspection of the Flowers

A properly dried plant keeps its vibrant color. Linden flowers remain yellow with light shades. Wild thyme retains its grey-green tone. Stems become brittle to a gentle touch. If the stem bends without snapping, the plant still holds moisture. We reject any batch with traces of dust or discoloration.

Pantry Storage

Direct light degrades delicate compounds. Place the herbs in thick glass jars or dense paper bags. Seal the container tightly after each use. Keep the jar away from heat sources and steam. Under these conditions, the flavor remains unchanged for a full year.
